Pectin is widely applied in light industry and chemical industry with good gelation and emulsification. Sunflower is planted in northern areas

and its plate contains pectin. If sunflower plate was put rational use

we can change waste material into things of value. The new technology of extracting pectin from sunflower plate by the aluminum salting out method is studied through experiments of orthogonal matrix. The experimental results show that the quality of the pectin is conformed to the AFCC3 standard.
